我們向來推介布緯食療用發源地德國的夸克 (Quark) 鮮芝士,比美式的茅屋芝士更香滑美味,用來做芝士與冷榨亞麻籽油食療組合是完美的,但其實這種夸克鮮芝士在德國、瑞士、荷蘭、法國和比利時非常流行,不食用布緯食療的人都會將它當點心或早餐吃,或搽麵包餅乾,或製作甜品。
這個用布緯鮮芝士做的意大利傳統甜品「提拉米蘇」,比一般的「提拉米蘇」少用一半的糖,而且用鮮芝士比用Marscapone 芝士低脂極多!這個食譜用歐美常用的意大利鮮奶條來做咖啡餅乾餡,效果不錯,但另一個選擇是用食療主義有賣的無麥麩心型糙米鬆餅,效果可能更佳。另外,我們選用了馬卡可可粉去替代朱古力,方便美味又有益!
布緯鮮芝士「提拉米蘇」食譜
材料 (6人用):
- 布緯鮮芝士 (250克) 兩杯
- 鮮雞蛋 4隻
- 齋黑凍咖啡 150毫升
- 椰花糖 10茶匙
- 意大利Lady Finger鮮奶條 12塊 (或無麥麩心型糙米鬆餅)
- 馬卡可可粉 (Macaccino) 12茶匙
- 一小撮海鹽或岩鹽
做法:
- 將蛋黃與蛋白分開
- 4個蛋黃放入碗(不需要蛋白)
- 將碗底浸在約攝氏95度的熱水裏 (不要滾水)
- 加糖10茶匙、一小撮海鹽或岩鹽
- 用手提電動攪拌棒將蛋液打勻,約兩分鐘
- 將碗撤離熱水,再打分半鐘
- 備用的齋黑凍咖啡倒入一個小碗
- 將Lady Finger鮮奶條 (或其他餅乾) 蘸一蘸凍咖啡
- 將一半份量逐塊放入6個玻璃容器
- 將500克夸克鮮芝士加入打好的蛋液
- 將芝士混入蛋液,直至勻循結合
- 將一半份量芝士蓋上咖啡餅乾
- 加一層馬卡可可粉
- 再加一層蘸過凍咖啡的餅乾
- 再蓋上一層芝士
- 蓋上最後一層馬卡可可粉
布緯鮮芝士「提拉米蘇」已準備好。
蓋上保鮮紙放雪櫃冷藏兩小時即可享用。
可隨意添加新鮮水果增加色香美味!
Budwig Fresh Cheese (Quark) Tiramisu
Ingredients for 6 servings:
- Budwig Fresh Cheese (250g) x 2 cups
- 4 eggs
- Cold espresso coffee 150ml
- Sugar 10 teaspoons
- Lady Fingers 12 pieces or other crunchy
- Macaccino powder 12 teaspoons
- A pinch of sea salt or rock salt
Method:
- Separate yolk and egg white
- Put 4 egg yolks into bowl (egg white not needed)
- Place bottom of bowl in hot water (around 95 degrees, not boiling)
- Add 10 teaspoons sugar plus a pinch of sea salt or rock salt
- Use electric hand blender to beat egg mixture for about 2 minutes
- Withdraw bowl from hot water and beat egg mixture for another 1.5 minutes
- Pour cold espresso into small bowl
- Dip Lady Fingers (or other cookies) into cold espresso
- Place half of cookies one by one into 6 glass containers
- Add 500g Budwig fresh cheese (quark) to egg mixture
- Fold cheese into egg mixture until evenly melded
- Spoon half of the cheese over coffee-bathed cookies
- Add a layer of Macaccino powder
- Add the rest of the cookies one by one
- Layer the rest of the cheese over the cookies
- Spread over the rest of the Macaccino powder
Preparation for “Low Sugar Quark Tiramisu” is now complete.
Cover with cling film and refrigerate for 2 hours before serving.
Freely enhance with fresh fruit!
