Mitoku's Organic Yaemon Tamari is a top quality wheat-free soy sauce made in the traditional way, following a 500-year-old recipe and aged in cedar casks for over one year. The time-honoured recipe uses only half as much water as a typical modern soy sauce, resulting in a uniquely rich and concentrated tamari. The addition of a dash of Mikawa organic mirin, Japan's finest sweet rice cooking wine, provides a natural preservative and imparts a subtle sweetness that puts Yaemon Tamari in a class of its own.
