Flower Salt (Fleur de Sel) forms on the surface of the seawater due to a thermal shock when the heat of the day crosses the freshness of the night. This first delicate layer of crystals is harvested manually at dawn by the high quality artisanal salt collectors. Flower salt (Fleur de Sel) has delicate, light texture and a burst of flavour, best used as a finishing salt to flavour and garnish food, sweet or savoury dishes. 

La Baleine Guérande Flower Salt (Fleur de Sel) has a naturally gray shade which comes from the characteristic clay soil of the West part of France and this gives a richness in mineral salts and trace elements.

La Baleine from France has been producing sea salt from 1934 using a crystallisation process caused by natural forces of the sun, wind and the sea.
